Why, the date of the harvest of course!

And it's not as simple as it seems: it's necessary to take into account the health of the vines, the state of maturity, the difference in ripeness between the plots (grape variety, appellation, classification)

Exclusively by hand

To master all these elements we use fewer grape pickers and even if we pick for a few extra days this allows us to monitor the maturation plot by plot.

The grape harvest is carried out exclusively by hand so as to avoid crushing the grapes & to take care of the vines.
